Ingredients:
6 medium apples (Granny Smith or Gala), washed and dried
2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
1/2 tsp green food coloring (emerald shade)
1/4 tsp vanilla extract
Candy apple sticks
Directions:
1. Insert candy sticks into the top of each apple. Set them aside on a parchment-lined tray.
2. In a medium saucepan, combine the sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves.
3. Attach a candy thermometer to the side of the pan, making sure the tip is submerged in the syrup but not touching the bottom.
4. Bring the mixture to a boil and cook until it reaches 300°F (hard-crack stage).
5. Once it hits 300°F, remove from heat, and quickly stir in the emerald green food coloring and vanilla extract.
6. Working quickly, tilt the saucepan and dip each apple into the candy mixture, swirling to coat evenly. Let excess drip off.
7. Place the coated apples back on the parchment paper to set. Allow them to cool completely before serving.
