Banana Bread Cinnamon Rolls 

 

Ingredients:

For the Dough:
1 cup mashed ripe bananas (about 2-3 bananas)
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1/2 cup milk, warmed to about 110°F
2 1/4 teaspoons (1 packet) active dry yeast
2 large eggs
4 cups all-purpose flour, plus extra for dusting
1 teaspoon salt
For the Filling:
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
For the Cream Cheese Icing:
4 oz cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract

Directions:

Activate the Yeast: Combine warm milk, sugar, and yeast. Let it sit until foamy.
Prepare the Dough: Mix bananas, sugar, butter, eggs. Add yeast mixture, then flour and salt. Knead until smooth.
First Rise: Let the dough rise until doubled in size.
Make the Filling: Mix butter, brown sugar, cinnamon.
Roll Out the Dough: Roll the dough into a rectangle.
Fill and Roll: Spread filling, roll up the dough.
Slice and Arrange: Cut into pieces, place in a baking dish.
Second Rise: Let the rolls rise until puffed.
Bake: Bake until golden brown.
Make the Cream Cheese Icing: Beat cream cheese, butter, sugar, vanilla.
Ice and Serve: Spread icing over warm cinnamon rolls and enjoy!
