  • 1 ½ cups granulated sugar (plus ½ cup for coating)
  • 2 large eggs
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium-sized bowl, sift together flour, baking powder, salt, and ground nutmeg. Set aside.
  3. In a large mixing bowl, cream the softened butter and 1 ½ cups of sugar until light and fluffy.
  4. Beat in the eggs one at a time, ensuring the mixture is smooth and cohesive.
  5. Gradually incorporate the dry ingredients into the butter mixture, mixing until just combined.
  6. In a small bowl, combine the remaining ½ cup of sugar with the cinnamon.
  7. Roll the dough into 1 ¾-inch balls and coat each thoroughly in the cinnamon-sugar mixture.
  8. Place the coated dough balls on the prepared baking sheets, spacing them about 3 inches apart.
  9. Bake for 9–10 minutes, or until the cookies are lightly golden with set edges.
  10. Allow the cookies to cool on the baking sheet for 2–3 minutes before transferring them to a wire rack.
