2 large boneless, skinless chicken breasts, cut into 2-inch cubes
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1012 fresh mozzarella balls (bocconcini or ciliegine)
2 tbsp chopped fresh parsley (optional, for garnish)
Wooden or metal skewers
Half-slices of bacon (optional but highly recommended!)


Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. In a bowl, toss chicken cubes with olive oil, garlic powder, Italian seasoning, paprika, salt, and pepper.
  3. Flatten each chicken cube slightly. Place a mozzarella ball in the center and fold the chicken around it to form a “bomb.”
  4. Wrap each chicken bomb with half a slice of bacon, securing with a toothpick if necessary.
  5. Thread 3-4 wrapped chicken bombs onto each skewer.
  6. Grill or bake for 20-25 minutes, turning once halfway through, until chicken is cooked.
  7. Garnish with chopped parsley before serving.

Notes

  • Use fresh mozzarella (bocconcini or ciliegine) for a gooey, melty filling.
  • If you prefer spicier flavors, feel free to add a pinch of red pepper flakes to the seasoning.
  • The bacon can be optional or swapped with prosciutto for a different flavor twist.
  • If grilling, make sure to turn the skewers halfway through cooking to ensure even browning.
