Ingredients
Scale
- 2 cups granulated sugar
- 3/4 cup water
- 2/3 cup light corn syrup
- 1–2 packets of Kool-Aid (any flavor; adjust based on desired intensity of color and flavor)
- Lollipop sticks
- Optional: food coloring if you want to enhance the color (though Kool-Aid usually provides enough)
Instructions
- Start by preparing your workspace. Position the lollipop sticks into your molds or on a silicone mat where you want to pour the candy.
- In a medium-sized saucepan, mix the granulated sugar, water, and corn syrup together. Heat over medium flame while stirring until the sugar has fully dissolved.
- Increase the heat and let the mixture boil. Attach a candy thermometer to monitor the temperature without stirring it. Wait until it reaches the hard crack stage at 300°F.
- Once the mixture reaches the correct temperature, remove it from heat immediately. Carefully stir in the Kool-Aid powder and any food coloring you desire to achieve your perfect hue.
- Quickly pour the hot syrup into prepared molds or onto the silicone mat, being cautious of the high temperature.
- Allow the lollipops to set and cool completely at room temperature, which should take around 30 minutes to an hour based on their size.
- After they have cooled and hardened, gently pull the lollipops from the molds or peel them off the silicone mat.
- To keep them fresh, wrap each lollipop in cellophane or plastic wrap and store them in an airtight container at room temperature.
Notes
- To avoid sticking, lightly grease the molds or silicone mat with cooking spray.
- For vibrant colors and intense flavors, use two packets of Kool-Aid.
