- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 1/2 cups dried coconut (fine or medium cut)
- 1 1/2 cups graham cracker crumbs, plus extra for rolling
- 1 1/2 cups chocolate chips
Instructions
- In a large bowl, thoroughly combine the melted butter, sweetened condensed milk, and vanilla extract.
- Stir in the graham cracker crumbs, dried coconut, and chocolate chips until the mixture is well combined.
- Refrigerate the mixture for about an hour to firm up, which will make it easier to roll into balls.
- Scoop and roll the mixture into 1 1/4-inch balls. Keep them on the small side, as they are quite rich.
- Roll the formed balls in additional graham cracker crumbs to coat them evenly.
- Place the coated balls on a baking sheet or plate and refrigerate for 30 minutes to an hour until firm.
