Ingredients
Scale
- 8 oz cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups graham cracker crumbs
- 1 ½ cups semi-sweet chocolate chips (for dipping)
- 1 tbsp coconut oil or butter (for melting chocolate)
Instructions
- In a large bowl, mix the softened cream cheese and peanut butter together using an electric mixer until the mixture is creamy and smooth. Gradually add in the powdered sugar and vanilla extract, blending until everything is evenly mixed. Then, fold in the graham cracker crumbs until a thick, sticky dough forms.
- Scoop out tablespoon-sized portions of the mixture and use your hands to roll them into small balls. Arrange the rolled balls on a baking sheet lined with parchment paper.
- Place the baking sheet in the refrigerator for about 30 minutes to allow the balls to firm up.
- While the cheesecake balls are chilling, melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in intervals of 20-30 seconds and stirring in between until smooth.
- Once the cheesecake balls are sufficiently chilled, retrieve them from the fridge. Using a fork or skewer, dip each ball into the melted chocolate, making sure to coat them evenly. Allow the excess chocolate to drip off before placing them back on the parchment-lined sheet.
- After all the balls are coated, return them to the refrigerator for an additional 30 minutes to set the chocolate coating.
- Enjoy your delicious No-Bake Peanut Butter Cheesecake Balls once the chocolate is firm and ready to delight your taste buds!
