  • 1 pound breakfast sausage
  • 8 pancakes (store-bought or homemade)
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 cup shredded cheese (cheddar or your preference)
  • Maple syrup for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess fat and set aside.
  3. Cut the pancakes into quarters and layer half of them in the bottom of the prepared baking dish.
  4. Sprinkle half of the cooked sausage over the pancake layer, and top with half of the shredded cheese.
  5. In a mixing bowl, whisk together the eggs, milk, vanilla extract, baking powder, and cinnamon until well blended.
  6. Pour the egg mixture evenly over the layered pancakes, sausage, and cheese, making sure to cover evenly.
  7. Repeat the layering process with the remaining pancakes, sausage, and cheese.
  8. Bake in the preheated oven for 30-35 minutes, or until the egg is set and the top is golden brown.
  9. Let the casserole cool for a few minutes before slicing. Serve warm with drizzled maple syrup.

Notes

  • You can use homemade pancakes for a fresher, fluffier base. Leftover pancakes also work great in this recipe.
  • Add in vegetables like bell peppers or onions to the sausage layer for extra flavor.
  • This casserole can be assembled the night before and baked in the morning for a convenient, quick breakfast.
